Bearing protectors keep positive grease pressure inside the hub, so when a hot hub hits cold water the vacuum draws grease rather than water past the seal. On a trailer that gets backed down a ramp regularly, they are one of the highest-value few dollars you can spend.
They only work if maintained. Keep them charged with grease to the correct level — not overfilled, which pushes the rear seal out and creates the exact leak you were trying to prevent. Check them at the start of each season and after any long tow, and replace the covers if they are cracked or the spring has lost tension.
